Chia is a herbaceous plant originating from southern Mexico. It is cultivated in South America, where these robust plants have been grown for thousands of years and were once a staple in the diets of the Aztecs and Mayans. Chia seeds are powerful bundles of energy with high doses of omega-3, fibers, and proteins.
Chia seeds have a high concentration of Omega-3, and they are particularly an excellent source of alpha-linolenic acid, which is a form of essential fatty acid. Omega-3 fatty acids protect the body, guard against heart diseases, and regulate cholesterol balance in the blood. Scientists recommend consuming Omega-6 and Omega-3 in a ratio of about 3:1, but many of us consume too much Omega-6 and too little Omega-3. Compared to other sources of Omega-3, chia seeds do not contain harmful substances found in fish, for example, such as mercury and dioxins, or anti-nutritional compounds found in flaxseed oil.
Chia seeds are rich in fiber, antioxidants, calcium, and proteins. Fiber is an important component of our diet, helping to lower cholesterol levels and promote digestion. Chia seeds contain more protein and amino acids than most traditionally consumed cereals, including wheat, corn, rice, oats, and barley. A complete chain of amino acids is needed to build and renew body cells. Chia seeds are also a good source of some vitamins and minerals; they contain Vitamin A, B3, Iron, and Magnesium.
For thousands of years, they have been an important part of the human diet and one of the key crops in the pre-Columbian societies of Central America, where the seeds were used for food, medicine, and oils. Their "scientific" name is Salvia hispanica L.; the name "Salvia" comes from the Latin word salvare, which means "healer."
Chia seeds are grown on over 30 farms throughout South America, with production platforms in Ecuador, Bolivia, Paraguay, and Argentina. This diversity ensures the availability of the product regardless of local and climatic issues. The production process is standardized, ensuring consistently high product quality. Farms have been carefully inspected, and grants for training, vintage support, and sales support have been provided to farmers. Chia plants are harvested between November and January.
Chia seeds can be easily removed from the plant, achieving a purity level of 96% after harvest. The seeds are then passed through the cleaning mechanism, ensuring their purity through vibration and magnets. If the seeds are moist, they are dried in areas located about one meter above the ground, with hot air flowing underneath. Chia seeds are regularly tested for contaminants to ensure that the final product is completely clean.
